Ingredients
- 4 boneless skinless chicken breasts
- ii Tbsp butter
- ane Tbsp olive oil
- 2 tsp common salt
- 2 tsp pepper
- 1.v pt reddish tomatoes, halved
- three Tbsp orange marmalade
- 2 tsp crimson wine vinegar
- one/3 cup fresh basil
Instructions
- Melt 1 Tbsp butter with olive oil in skillet over medium heat.
- Season chicken with common salt and pepper, cook five minutes per side, until slightly browned. Remove to plate and set aside.
- Lower oestrus to medium-low, add remaining butter to pan. Once melted add half of cherry tomatoes, scrape browned bits from chicken and mix.
- Add together 3-4 Tbsp water, vinegar, orange marmalade and remaining cherry tomatoes. Cook about 5 minutes, stirring continuously. Add salt and pepper to taste, along with basil.
- Serve tomato mixture over chicken.
